Paddy’s cooking is one of the highlights of staying at Roundwood House.

His food is seasonal, thoughtful and full of flavour, with menus changing according to what is good and available.

In the kitchen he works closely with Blanka, who keeps everything running smoothly and adds her own Polish influences to the dishes.

We grow our own herbs, rhubarb, apples, plums and pears in the garden and source everything else as locally as we can.

Our meat comes from our local butcher Mick, who specialises in beef and lamb and also keeps his own pigs.

Ingredients come from small producers across Laois and the neighbouring counties, along with Ballykilcavan beers and a wine list put together with JN Wine, who work closely with small wine producers.

Dinner at Roundwood House in County Laois is a four-course set menu, usually served communally in the dining room, with private dining also an option.

Most dinners start the same way, with everyone breaking into a loaf of Paddy’s sourdough, his pride and joy after his children, of course.

Everything on the plate has been carefully chosen, from the local meat and vegetables to the Irish cheeses, homemade chutney and house crackers.

The atmosphere is relaxed and unhurried, with easy conversation, an open fire in the grate and, every now and again, an after-dinner song from Paddy and his daughter Lucie.
